Hinoki Wood Pressed Sushi Mold

Shaping sushi is great fun, but it ain't easy. My first kitchen job, I got thrown into the sushi section of the restaurant and told to help the chef get 200 nigiri ready for a big party, needless to say, I wasted more than I made. But no longer! The Hinoki Wood Pressed Sushi Mould makes pressed sushi accessible to everyone.

Simply place your mould onto the base, add your rice and press down with the pressing plate to create a base. Remove the pressing plate and add your topping, press again, and it's ready to slice. Either slice in the mould using the knife slots or remove and freestyle it.

Before the first use, soak in water with a splash of vinegar for one hour. For subsequent uses, soak the mould in water for 5 minutes before use. After each use, wet the inside lightly to prevent sticking. Wash by hand and air dry; never put it in the dishwasher.
